if the VC requires the control of a specific "hex", although incidentally containing a building, I believe that a AFV (NOT in bypass) could control it as long it stays there at the end of the game and the hex is devoid of armed enemy units.
A lone SMC moving in the said hex prevents the AFV's control of the (building) hex.

correct?

A26.13 "HEX CONTROL: Only an armed Good Order Infantry MMC at ground level can gain Control of the hex it occupies [EXC: Mopping Up (12.153); Bridge hex (B6.); a vehicle Controlling the only Location within the hex (26.12)]." So if the building has multiple levels, a vehicle can't gain control (but it would prevent control loss). If there is one Location, the vehicle can gain control, and would retain control until it leaves the hex [A26.12]. A SMC (or any other unit really) in the Location when the vehicle entered would prevent control change, but one entering after the vehicle had seized control would not loosen that control.

it would be different if the VC requires the control of a (one hex/story) "building". The AFV, even if alone and not in bypass, cannot gain the building control per A 26.14 where is stated that a MMC is necessary.

Yes, and this is made very clear in A26.11, "A vehicle (or its PRC) can never gain Control of a building."
