I would not reccomend Country slogs to new players. The city slog fanbase is what made ASL popular and made the game possible to grow and attract new players.

Yes, you must check for Falling Rubble. The rules is clear on this issue. A common Scenario SSR otherwise state: "Place rubble in the following building hexes, Falling Rubble is NA during this rubble placement".

As the rules are written LOS is possible , but always played as LOS is blocked, common sense will prevail.

After seeing your links, it is clearly an overdesign, looks nice but , my experience tells me (played about 7300 scenarios) that it is not worth it.
