Really should read the manual properly but...

when I open Europe Aflame or FitE in TOAW III (from the scenarios supplied with the game) and turn on Supply Paths or Possession it only shows the immediate areas around units on the map, or perhaps the hexes adjacent.

Is this some new display feature that I've failed to toggle properly?

Obviously I'd prefer to see all of the supply paths and possession.

That's the "no borders" option, set in the Advanced Game Rules. Set that to off, and you'll have the old-school supply displays.
