When I take an enemy airfield ...

... the planes just disappear. Are they captured/destroyed and removed from the game, or are they just relocated to another enemy-held airfield? If so, does that at least cause them to "reorganize" or is there no penalty at all?

those planes fly to another airfield that your opponent still holds. i assume its taken for granted that aircraft will fly away to safer destinations if their bases come under threat

I was wondering about this too as a while back I played a modern scen and used my airborne and special forces to knock out a bunch of my opponents airbases. It would stand to reason that while some would escape there would have to be a considerable amount destroyed or disabled and survivors would be in reorg at the new base. I wonder if that would be determined by the type of unit atacking the airfield?
