In cooking up a map, which side of the escarpment is the top? The one in which the escarpment lies, or bordering hex?

I find the easiest thing to do is open up a map of the North African coast (Crusader 41, Tobruk 41, CFNA 41-43), look at the escarpment hexes near the sea and remember/visualise that these are cliffs (escarpments/bluffs) overlooking the sea.
Having figured it out this way, I then close the file until I need to know the next time... I wish someone had an easy rule of thumb like stalaCtites (C=Ceiling) and stalaGmites (G=Ground)...
